On December 12, 2025, the Yanbian County of Panzhihua City in Sichuan Province officially unveiled the Black Truffle-Themed Banquet, which is one of the five themed banquets in the"Yanbian'sTwelve Special Flavors" culinary series. Using the locally exclusive black truffles as the main ingredients, this banquet has showcased the culinary wisdom of"ingredients honored and delicacies born" through the skillful application of exquisite cooking methods like steaming, boiling, stir-frying and deep-frying.
Nestled within the subtropical humid climate region, Yanbian County’s unique altitude ranging from 1,500 to 2,600 meters and acidic soil abundant in organic substances create optimal conditions for cultivating premium-quality black truffles. This ingredient, hailed as the"edible diamond on the dining table", not only has appealing aroma and delicate taste, but also is rich in various essential amino acids and minerals for human health, such as potassium, iron and selenium. Its nutritional value far surpasses that of ordinary edible fungi.
Reportedly following the cooking philosophy of“the unity of heart and hands, and the harmony of water and fire”, the culinary dishes served at the Truffle-Themed Banquet are made through low-temperature rapid cooking methods to retain ingredient’s authentic taste, of which some are the classic pairings, such as truffles paired with oil-infused preserved pork (Yanbian's intangible cultural heritage), some are innovative dishes, such as the truffle and mushroom broth and truffle-fried fresh vegetables. While preserving the unique nutty and creamy flavors of black truffles, these dishes have also infused the distinctive features of Yanbian cuisine, which is known for its spicy fresh, and aromatic qualities, blending the culinary traditions of Sichuan and Yunnan.
The unveiling of the Truffle-Themed Banquet is another remarkable achievement of Yanbian County in deeply exploring its local rare food resources. This initiative carries on the innovative culinary concept of“Yanbian Cuisine Collection” and“Twelve Special Flavors” series, perfectly blending natural abundance with its time-honored cooking wisdom.
